Cooking with Fritz ~ Today: Boo’s Bacon Brownies


Hello dear fans!

As much as I would have you believe I dislike that pesky feline Boo, I have become rather attached to him. He brings a new kind of mayhem to the Mansion. For to many years the Mansion was as quiet as a tomb. Now it is more like a zoo, but a zoo that I dearly love. I have on occasion made these brownies as a special treat for our one and only Boo.

Boo’s Bacon Brownies


Ingredients

  • 1/2 cup white sugar
  • 2 tablespoons bacon oil
  • 2 tablespoons strong coffee
  • 1 1/2 cups semisweet chocolate chips
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 2/3 cup all-purpose flour
  • 1/4 teaspoon sea salt
  • 4 slices of bacon, cooked, drained and chopped


Directions

1.Preheat the oven to 325° degrees. Grease an 8x8 inch square pan, set aside.

2.In a medium saucepan, combine the sugar, oil and coffee. Cook over medium heat until boiling. Remove from heat and stir in chocolate chips until melted and smooth. Mix in the eggs and vanilla. In a separate bowl combine the flour, baking soda and salt; stir into the chocolate mixture. Spread evenly into the prepared pan.

3.Bake for 15 minutes, remove from oven and sprinkle with bacon, return to oven and bake an addition 10 to 15 minutes or until brownies set up. Do not over bake! Cool in pan and cut into squares and serve.

Yields 16 Brownies

*Bacon oil: Cook 2 slices of bacon, drain and chop. Add chopped bacon to an airtight container, to the container add 1 cup of Extra Virgin Olive Oil, cover and allow sit for 4 hour before use. Drain oil to remove bacon, oil is ready to use. Store oil in an airtight container for up to 2 weeks.
