The quietest member of our family is also one of the most lovable. Blaylock is a gentleman among the barbarians in the Mansion. He enjoys organic foods, good wine and is always willing to try something new. He is a pleasure to cook for and likes to challenge my cooking skills.
Blaylock’s Organic Pasta
•1 (14.5 ounce) package whole grain Rotini Pasta
•1 tablespoon extra-virgin olive oil
•1/2 cup onions (finely chopped)
•3 cloves garlic (minced)
•2 (14.5 ounce) cans organic fire roasted tomatoes with juice (no salt added)
•1/2 cup chocolate wine
•2 teaspoons dried Italian seasoning
•salt and pepper to taste
•2 tablespoons fresh basil (coarsely chopped)
•1/4 cup freshly grated parmesan cheese
Directions
Prepare pasta according to package directions.
In a large skillet over medium heat add olive oil and onions, cook 5 minutes. Add garlic and tomatoes to skillet and bring to a boil. Reduce heat and add wine, Italian seasoning, salt and pepper (to taste) and let simmer for 10 minutes. Add cooked pasta and mix well coating all of the pasta. Remove from heat, and transfer pasta and sauce to a serving plate. Top with fresh basil and parmesan cheese. Serve warm.
*This dish is great as a cold pasta salad as well. Refrigerate overnight and mix in 1 cup of zesty Italian dressing.
***I do not recommend you use a Chocolate Wine that looks like chocolate milk. There are a few good Red Chocolate Wines on the market that are great for cooking with.
