Cooking with Fritz ~ Today: Bourbon Balls

Hello dear fan!

I have been most fortunate to have had Master Darius give me the best gift a Doggen could ask for, a family to care for. As head Doggen most people would think my job might be demanding, tedious and monotonous. This is not a job to me, this is mine family and there is nothing I would not do for any of them. The best part of my life is cooking for all the Brothers and their Shellan. There is nothing I enjoy more or makes me happier than seeing them enjoy a good meal or a special treat. I thought I would share with you some of their favorite foods and recipes. Let’s start with one of our newest members of our family Dr. Manuel, as much as he would have you believe he eats healthy, he does enjoy his sweets *if it includes alcohol even better* this is one of his favorites.


Bourbon Balls

Ingredients

•    1 cup pecans
•    3 1/2 cup vanilla wafers
•    1 pound confectioners’ sugar
•    1 1/2 tablespoons unsweetened cocoa powder
•    1/2 cup bourbon
•    3 tablespoons light corn syrup
•    additional confectioners’ sugar for coating

Directions

In a food processor finely grind pecans, add vanilla wafers and continue grinding to the consistency of flour. To the nut and wafer mixture add confectioners’ sugar a 1/4 cup at a time. Pulse food processor between additions of confectioners’ sugar. Once all of the sugar has been added and mixed well, add cocoa powder, bourbon and corn syrup. Pulse until blended well. Roll mixture into 1 inch balls. Refrigerate in an airtight container for at least 3 hours but can be refrigerated for up to 1 week. Roll balls in confectioners’ sugar before serving.

Yields 36 bourbon balls
